-Ana Maria Donneys is a fifth-generation coffee producer from Quindío who took over her family’s farms in 2019 following her grandfather’s passing. After losing her mother in 2020, she drew on both personal resilience and new insights gained while living in Bogotá, where she discovered the potential of quality-driven coffee.
She went on to found Café Primitivo to honor her family legacy—especially her grandfather, Primitivo Correal Barrios—whose passion for coffee and its people continues to inspire her work.

 

 

This coffee undergoes a carefully controlled anaerobic fermentation to maximize aromatic complexity and balanced sweetness. The cherries ferment for 96 hours in sealed, carbon-dioxide–filled tanks before being pulped and returned for an additional 24 hours.

During fermentation, the yeast Saccharomyces cerevisiae converts sugars into aromatic compounds that create floral and fruity notes. The result is a vibrant cup with layered flavors of rose, jasmine, strawberry, and cherry.

By introducing this specific yeast strain, the process remains clean and stable, avoiding harsh acids while promoting lactic and citric acids that give the coffee a bright, juicy acidity and natural sweetness.
