We’re excited to partner with Juan Puerta of Sens Coffee, who is pioneering a processing style called Osmotic Dehydration.

In this process, Juan uses a celebrated Colombian fruit Araza, known for its sweet-tart intensity and vibrant citrus aroma. Often described as a cross between guava and pear with hints of lemon, Arazá is sometimes called the “seven-flavor fruit” due to its remarkable complexity.

Through osmotic dehydration, Juan gently infuses the essence of Arazá into this Castillo variety, resulting in beautifully subtle notes of papaya, raspberry, and lemon, all wrapped in a round, lingering sweetness.
