One of the standout microlots from Las Marías Estate, Río Dulce Gesha Double Washed is the result of a meticulous, multi-stage fermentation protocol designed to amplify clarity, vibrant acidity, and refined floral expression.

Processing Details:

  • Selective Harvesting: Cherries are hand-picked at peak ripeness, reaching approximately 20° Brix, ensuring optimal sweetness and balance.

  • First Fermentation: Whole cherries undergo a 12-hour anaerobic fermentation in sealed tanks to initiate controlled flavor development.

  • Pulping & Second Fermentation: The cherries are pulped without water and transferred to open tanks for a 24-hour dry fermentation, enhancing structure and aromatic complexity.

  • First Wash & Third Fermentation: After washing and draining, the parchment undergoes an additional 24-hour open-air fermentation to further refine clarity and acidity.

  • Final Wash & Drying: The coffee is thoroughly washed and slowly dried on raised African beds for approximately 25 days, with temperatures carefully kept below 35°C, reaching a final moisture content of 10–11%.
